If you enjoy cooking, then try this recipe for barley soup – my all-time favourite soup.
- 125g pearl barley
- 1-2 carrots
- 1 stick of celery
- 1 small onion
- 1 bay leaf
- 2-3 juniper berries
- 2 thick slices of bacon (diced)
- Salt and pepper
Wash the vegetables and cut into small pieces. Rinse the barley and put in a pan with water, a dash of milk and the onion (whole). Then bring to the boil and simmer for around 45 minutes. Add the diced vegetables and bacon and boil for a further 15 minutes until the vegetables and barley are tender. Season with salt and pepper and, if necessary, thicken the soup a little.
