Recipe: Gerstensuppe (Barley Soup)

This soup is guaranteed to warm you up after a brisk walk along one of Mayrhofen-Hippach’s walking paths.

If you enjoy cooking, then try this recipe for barley soup – my all-time favourite soup.


  • 125g pearl barley
  • 1-2 carrots
  • 1 stick of celery
  • 1 small onion
  • 1 bay leaf
  • 2-3 juniper berries
  • 2 thick slices of bacon (diced)
  • Butter
  • Salt and pepper

Wash the vegetables and cut into small pieces. Rinse the barley and put in a pan with water, a dash of milk and the onion (whole). Then bring to the boil and simmer for around 45 minutes. Add the diced vegetables and bacon and boil for a further 15 minutes until the vegetables and barley are tender. Season with salt and pepper and, if necessary, thicken the soup a little.
