Zillertaler Krapfen – Vlog by Oma Gretl

The recipe alone is often not enough to master the art of making Zillertaler Krapfen. So, I am thrilled that my colleague’s grandmother allowed us to film her as she prepared this traditional dish.

Alfred Geisler went to visit his charming 89-year-old grandmother Oma Gretl and her sweet little cat, Mori. He was allowed to watch over her shoulder as she made original Zillertaler Krapfen and film it for us. This is Ziller Valley cooking at its very best!

The recipe as described in the film is for a small amount – approximately 50 Krapfen: 

Ingredients for the pastry:  

  • 250g rye flour 
  • 250g wheat flour 
  • Water and milk mixed together
  • Some salt
  • Some flour for rolling the pastry
     

Ingredients for the filling:

  • approx. 1.25 kg Tyrolean potatoes
  • approx. 400g Tyrolean Grey Cheese (Graukäse)
  • Chives
  • Salt
     

Of course, you can always sample this delicacy at the many festivals in the Ziller Valley, where it is a popular snack.
